OUR OLIVE MILL
Kontos Olive Mill Vasiliko Evia - Production & Distribution of Extra Virgin Olive Oil

At our modern olive mill “Kontos Olive Mill” in Vasiliko, Evia, for the extraction of olive oil we use a three - phase centrifugal system.
In addition, the “traditional process” is applied, during which the olive oil is extracted by pressure in a hydraulic press. It constitutes the best method of production, based on the combination of the traditional production method with the use of modern technological equipment. |

Production Stages
For the processing of olive oil we follow seven steps:

1. Receipt of the fruit
Receipt of the fruit with our own vehicles from the nearby areas of the producers or transportation by the producers themselves to our facility. |

2. Washing
The olives are first placed in a fruit reception hopper and then led by a screw conveyor to the defoliator, where leaves and other foreign materials are removed. Washing follows to remove foreign substances (dust, soil, etc.). After washing, the grinding of the fruit in a crusher follows. |

3. Crushing - grinding of the olive fruit
The grinding of the fruit is done with a crusher with toothed disks. If the olives being processed are frozen or very dry, a small amount of water is added. |

4. Malaxation
After grinding, the olive paste is mixed in the malaxer after the addition of warm water. Malaxation is a key stage of processing and contributes to the merging of small oil droplets into larger drops of oil. To facilitate the process, the olive paste is heated to 28 - 30ºC. |

7. Final separation
The final separation of the olive oil from the vegetable liquids is carried out using centrifugal oil separators. |
